Veggie Summer Rolls

Missing Ingredients
  • Slice 8oz of mushrooms into thin pieces. Set aside.
  • Set 1 TSP of oil in a large pan over medium heat.
  • Once oil is hot, add mushrooms.
  • Meanwhile, mince 1 TBSP of garlic, 2 TBSP of ginger root and 1/3 cup of green onions.
  • After mushrooms release their water, add in chopped veggies and 2 TSP of soy sauce. Mix well and cook for 5 minutes until water is mostly gone.
  • Add in 1/2 TSP of sesame oil. Mix well and remove from heat.
  • Pour mixture in a coriander to get rid of excess liquid.
  • Chop up carrots, bell peppers and/or cucumbers into long slices. Set aside.
  • Fill rolls with mushrooms mix, a few slices of the crunchy veggies and some chopped spinach.
