Veggie Mix

Missing Ingredients
  • Dice 1 yellow onion. Set aside.
  • Slice 1/4 cup of mushrooms. Set aside.
  • Set 1-1/2 TBS of oil in a large pan over medium heat.
  • While that's heating, chop 1 TSP of garlic.
  • Set 1 cup of rice or quinoa, garlic and onion in pan. Cook until onions are translucent.
  • Add 2 cups of water, 1 cup of frozen veggies and mushrooms.
  • Bring to a boil, then immediately lower to a gentle simmer.
  • Cook for about 20 minutes, until no water is left.
