Tofu Salsa Scramble

Missing Ingredients
  • Wrap your tofu in a clean towel (or paper towels) and place a heavy book (or anything as heavy) on top of it. This is to get some of the water out. Leave it there.
  • Mince 2 TBSP of garlic. Set aside.
  • Slice or chop 1/2 an onion, 1 bell pepper and 1 hot pepper. Set aside.
  • Set 1 TSP of oil in a pan over medium-heat.
  • While that heats up, unwrap the tofu and crumble into a bowl.
  • Cook 1 TBSP of minced garlic in oil until just starting to brown.
  • Mix in tofu and 2 TSP of soy sauce. Stir well.
  • Mix in 4 TBSP of nutritional yeast. Stir well.
  • Remove from heat and cover.
  • Heat up 1 TSP of oil in a pan over medium heat.
  • Cook hot pepper, onion and bell peppers until onions just start to brown.
  • Add in the rest of the garlic, a good handful of spinach and 2 cups of salsa or salsa verde. Cook until spinach wilts.
  • Mix everything together and top with avocado.
