Savory Carrot and Grains Mix

- INGREDIENTS
- Cook 1 cup of rice, quinoa or couscous.
- Chop up 2/3 cup of carrots (about 3 carrots). Set aside.
- Set 1 TBSP of oil over medium-low heat.
- While oil heats up, chop up 1 TBSP garlic.
- Cook garlic until just starting to brown. Add chopped carrots.
- Cook carrots for 5 minutes. Stirring occasionally.
- While carrots cook, drain and rinse one 15oz can of black beans.
- Add beans to carrots along with 2 TBSP lemon juice, 1 TBSP soy sauce and 1 TBSP sesame oil. Mix well.
- Cook for 2-3 minutes. Remove from heat.
- Mix everything together and enojoy!
