Rice Pudding

- Set 4-1/2 cups of non-dairy milk out so it comes down to room temperature.
- In a pot, set 1-1/2 cups of water, 3/4 cups of white rice and a dash of salt.
- Bring to a boil, then immediately back down to a gentle simmer.
- Simmer for 10 minutes or more until most of the water is absorbed.
- Add 3-1/2 cups of soymilk and 1/2 cup sugar. Stir to mix.
- Continue cooking at gentle simmer for 25 minutes or until thick and no runny liquid is left.
- While that's cooking, mix 1/4 cup of milk and 1 TBS of cornstarch well until theres no powder left.
- Mix 1-1/2 TBS vanilla extract and 1/4 TSP cardamom into cornstarch-milk mixture.
- Once rice is done cooking, remove from heat and mix with cornstarch mixture and 3/4 cup more of milk.
