- INGREDIENTS
- Set aside 1 cup uncooked rice.
- Chop 1 bell pepper, set aside.
- Set 2 TBSP of oil in a large pan over medium heat.
- Chop a onion, set aside.
- Cook onion, rice and bell pepper in oil until onions are tender and a bit translucent. About 5 minutes.
- Mix in one 10z can of diced tomatoes, 2 cups of water, 1 TSP salt and 2 TSP of chili powder.
- Cover and simmer for 25 minutes or until all the water has dried up.
