Potato Pancakes

- Wash and peel 4 potatoes.
- Cube 2 of them.
- Place cubed potatoes in a pot with enough water to cover by an inch and 1 TSP of salt.
- Set on highest heat. As soon as it starts boiling, reduce to a simmer. Cook for about 15 minutes until potatoes are tender all the way through.
- While those boil, grate the other 2 potatoes.
- Grab the grated potatoes over a bowl and squeeze tighly. Try to squeeze out as much water as possible.
- Place the grated potatoes on a cutting board and press hard with a clean towel or paper towels. Do this 2-3 times until barely any water comes out.
- When the boiling potatoes are done, drain and mash until there are no chunks left.
- Mix mashed potatoes with grated potatoes and 1 TBSP of flour. Mix well with your hands.
- Put a little flour over a large cutting board or counter top. Flatten your potato mixture over it as thin as you can without it falling apart.
- Set some butter or oil in a large pan over medium heat.
- Slice potato mixture into squares.
- Cook in pan for about 10 minutes per side.
