Mushrooms & Brown Rice

Missing Ingredients
  • Slice 1/2 cup of mushrooms. Set aside.
  • Grate 1 TSP of ginger root. Set aside.
  • Chop 1 onion, set aside.
  • Set a large pan over medium heat. Heat 1 TBSP of oil or butter to grease the pan.
  • Once oil is hot or butter melts, add chopped onion. Cook until browned.
  • While onion cooks, crush 1/2 TSP of garlic. Set aside.
  • Once onions are browned, add in the garlic, ginger, 1 cup of brown rice and 1/2 TSP of turmeric.
  • Cook, stirring, for 3 minutes.
  • Add in sliced mushrooms and 2 cups of water. Cover and cook over a gentle simmer. There should barely be bubbles.
  • Cook until there is no water at the bottom of the pan. Start checking around the 20 minutes mark.
  • While rice cooks, chop 1/2 cup cilantro and toast 2 TBSP of pine nuts in a dry pan over medium heat. Set aside.
  • Once rice is ready, mix in pine nuts and cilantro.
