Mexican Quinoa Bowl

- Set 1/2 cup of quinoa to cook. Don't remember how? Click here.
- While quinoa cooks, drain and rinse 1/4 cup of sweet corn and 1/4 cup kidney or red beans. Set in a large bowl.
- Seed 1 serrano or jalapeƱo pepper, slice thinly and add to bowl.
- Cut 10 cherry tomatoes in quarters. Add to bowl.
- Chop 1/4 cup cilantro, add to bowl.
- Dice 1/2 TSP of garlic. Add to bowl.
- Chop 3 green onions. Add to bowl.
- Once quinoa is cooked, add to bowl, also add 2 TBSP of lime juice, season with a bit of salt to taste and mix everything well.
- Serve with avocado slices.
