Easy Delicious No Meat Chili

Missing Ingredients
  • Drain and rinse one 15oz can of black beans, one 15oz can of red beans and one 15oz can of corn. Set aside.
  • Slice 1 onion.
  • Set 1 TBSP of oil in a large pot over medium heat.
  • While oil heats up, chop 1 TBSP of garlic.
  • Throw garlic and onion in pot and cook until onion is translucent. Stirring occasionally.
  • While that cooks, chop one bell pepper and if you have some, 2 hot peppers of any kind.
  • Once onions are ready, bring heat to medium-high and add in peppers. Cook for 3 minutes.
  • While that goes, set aside 2 TBSP of chili powder and 2 TSP of cumin.
  • Mix in black beans, red beans, corn, one 15oz can of diced tomatoes (or fresh), 1 cup of hot water, chili and cumin.
  • Bring to a gentle simmer and leave it there for 15 minutes.
