Chili Flautas

Missing Ingredients
  • If using cooked pinto beans, blend 1-1/2 cups until you get the right consistency. Set aside.
  • Heat 2 TSP of oil in a large skillet over medium heat.
  • While that heats, dice 1/2 cup of onion, and 1 TBSP of garlic. Set aside.
  • Preheat oven to 400°F.
  • Once oil is hot, cook onion until lightly browned.
  • Add in garlic, 1 TBSP of chili powder, 1/2 TSP of salt and 1 TBSP of lime juice. Cook for 1 minute.
  • Mix in refried beans and 1 cup of corn. Cook until warm.
  • To make a flauta, put 2-3 TBSP of the beans mixture in a line on one end of the tortilla, then carefully roll it up. Use the same mixture as glue to keep the flauta shut once it’s rolled up.
  • Bake for 15 minutes.
