
Beet & Coconut Soup

- INGREDIENTS
- Slice 1/2 cup of onion and 1/4 cup of celery.
- Set some butter or oil in a pot or large pan over medium heat. Just enough to grease it.
- While that heats up, cube 8 beetroots. That's around 2 cups.
- Cook celery and onions until soft and onions are just starting to brown.
- Add 1 cup of canned coconut milk, 2 cups vegetable broth, beetroot and 4 TBSP of lime juice. Bring to a boil, stirring occasionally.
- Once boiling, pour in a blender and blend until completely smooth.
- Pour back in pot, add salt and pepper to taste and enjoy!
